That is why my kids love it when I make my Cowboy Pinto Beans. Dinner in our home has gone from ordinary to extraordinary. The Skillet Cowboy Pinto Beans are unlike anything you’ve ever had before. This recipe has become a staple in my home. You know us southerners, we’ve always gotta have our beans. Pair the Cast Iron Cowboy Pinto Beans with some corn bread and you can’t go wrong.

Ingredients for Cowboy Skillet Pinto Beans:

Ingredients

  • 6 slices of thick bacon(cut in half)
  • 1 large onion(diced)
  • 2 cloves garlic(minced)
  • 1 can green chilis
  • 1 can fire roasted diced tomatoes
  • 2 cans Luck’s pinto beans(drained and rinsed)
  • salt and pepper to taste

Garnish

  • sour cream
  • green onion
  • cheddar cheese

Directions

Slice bacon and fry until crispy
Add onion and cook for 5 minutes
Add garlic and cook for 1 minute
Add green chilis, tomatoes, pinto beans, salt, and pepper
Stir until mixed well
Cover and simmer on low for 20 minutes

Garnish and Serve!
